The Recipe: Beet the Carrot Spring Slaw Salad
3-4 tablespoons lime juice
1 tablespoon agave nectar
1 tablespoon ginger, grated
3 tablespoon of avocado oil
1-3/4 cup beet roots, grated
1 ¾ cup carrots, peeled and grated
1 ¾ cup honey crisp apples, peeled and grated
1. In a large bowl, combine the grated beets, carrots, and apple.
2. To make the dressing, combine lime juice, honey, and ginger. Then whisk vigorously.
3. Mix dressing with the grated beets, carrots, and apple.
